Adrian Santiago, the 2020 Barista Champion of Panama, started the TNT Coffee Lab in 2024, a processing lab that collects coffee cherries from farms and producers in the Chiriquí region, which handles innovative processes and precise monitoring of fermentation and drying. With the experience gained from working with local producers in Panama before starting TNT, Adrian discovered that innovative processing would be a way to unlock the unlimited potential of Panama Geisha and all other beautiful varietals.

With TNT Lab Polar Bear Process, to slow dry the coffee, Cherries were dried at 9 °C for 7 days, 16 °C for 7 days, then move to a high temperature green house for 25-30°C for 14 days.
