Located on the slopes of Cerro Chirripó, Costa Rica’s highest peak, Aromas del Chirripó is a family-led project that embodies effort, innovation, and a deep rooted coffee heritage. Founded by two generations working hand in hand, the micro mill was born from a desire to add value to their own harvest and become more involved in the national coffee culture.
Their farms, División and Los Alpes, span 22 hectares between 1,450 and 2,000 meters above sea level and host more than 100,000 coffee plants. The varietal diversity is striking: traditional types like Caturra, Catuaí, and Bourbon grow alongside exotic cultivars such as Geisha, SL28, Java, Wush-Wush, Mibirizi, and ET47.
Guided by expert agronomists, the team continually experiments to bring out distinctive and consistent cup profiles.At the mill, all coffees are processed using natural and honey methods, an intentional decision to reduce water usage and enhance sensory expression. These methods, combined with their sustainability goals, form a clear environmental commitment: over 2,300 native trees have been planted across the farms, and inputs are increasingly shifting toward biological alternatives.
