Gesha Anaerobic Slow-Dry

After being washed and sorted, the coffee cherries will be placed in sealed fermenta- tion tanks with special air exhaust valve and filled with clean fresh water for 5 days. Farm workers will then rinse this tanks everyday with water on the outside of the tank to maintain temperature, until it smells like blackberry and cherry wine.

On the 5th day, after opening the sealed fermentation tanks, coffee cherries will be washed one more time and then they are ready for the next step which is sun drying the coffee in the elevated African beds for 2 weeks, they shift the coffee from side to side every hour with a special tool and depending on the weather, a tarp will cover the African beds for protection. On the next two weeks, they will dry this coffee lot in a warm indoor facility to be able to maintain a slow but steady coffee drying process while preventing more fermentation and mold from developing. This process of drying will take around 1 month.

Story of Los Cantares Estate

Los Cantares Estate was originally established in 1929 . It was one of the first coffee producing and exporting farms in the Volcan region of the Chiriqui Province in Panama. It is located in the vicinity of the Volcan Baru National Park. Within the first 200 meters of the estate property runs the Chiriqui Viejo river, which separates the farm on one side from the mainland. This river separation and the 20 hectares of primary forest that surround the plantation, allow for a very special micro climate within the farm.

This 50 hectares coffee estate is currently managed by its owner Marie Jackie Mercer Vallarino, and has been exporting coffee internationally for over 20 years. Since 2012, Los Cantares had a great successes on the Best of Panama after the first harvest of their Geisha and the introduction to the competition.
