This is the second year we purchase coffee from Killenso Washing station, owned by Akiliu family. And this year, we worked with the owner of the washing station - Biniyam Akililu, who is also a young passionated, also the third generation of a coffee exporter in Addis Ababa, to improve the cup quality by sorting, processing and drying.
Except the anaerobic & carbonic natural process experiment , this year, Biniyam also tried a micro-lot with anaerobic honey processed. To process the coffee, cherries were fermented inside a grain-pro bag for 24 hours before depulped. Then those fermented and depulped cherries were sun dried with shading for up to 20 days. We found that with this fermentation increased the flavour intensity and complexity then a normal honey process.
