Finca La Gallera is located in the southern part of the Tolima region, about 180km away from the Bogota, capital city of Colombia.

To process this Sidra, producer Jose Joaquin fermented the coffee cherry for 12 hours before delivery into wet mill, then process another fermentation in the tank for 12 hours. After the fermentation, cherry was fully washed and then sun dried on the raised bay for 15 days.
